
Sweet caramelized onions, slightly wilted and smoky lettuce, and creamy goat cheese atop crispy flatbreads. A delicious and simple appetizer or light meal.
Preheat oven to 400°F (200°C).
Heat olive oil in a large skillet over medium-low heat. Add sliced onions, salt, and pepper. Cook, stirring occasionally, for 20-25 minutes, or until onions are deeply caramelized and softened. Stir in brown sugar (if using) and balsamic vinegar during the last 5 minutes of cooking.
While the onions are caramelizing, lightly brush the flatbreads with olive oil and bake for 5-7 minutes, or until slightly crispy.
In the last few minutes of onion cooking, add the minced garlic and chopped lettuce to the skillet. Stir gently until the lettuce is slightly wilted and incorporated with the onions (about 1-2 minutes).
Remove flatbreads from the oven. Spread the caramelized onion and lettuce mixture evenly over each flatbread.
Top with crumbled goat cheese and fresh thyme (if using).
Serve immediately.

For a spicier kick, add a pinch of red pepper flakes while cooking the onions.
You can use other types of cheese, such as feta or mozzarella, instead of goat cheese.
If you don't have flatbreads, use pita bread or naan bread.
For a vegan option, omit the goat cheese or use a vegan cheese alternative.
