A healthy and delicious snack made with thinly sliced apples, baked until crispy and sprinkled with cinnamon. Perfect for satisfying your sweet tooth without the guilt!
Preheat oven to 200°F (95°C).
Wash and core the apples. Using a mandoline slicer (or a very sharp knife), slice the apples into very thin slices (about 1/16 inch thick).
Arrange the apple slices in a single layer on a baking sheet lined with parchment paper.
In a small bowl, combine the cinnamon and sugar (if using).
Sprinkle the cinnamon-sugar mixture evenly over the apple slices.
Bake for 1 hour, or until the edges are lightly browned and the chips are crispy. Flip halfway through baking.
Let cool completely on the baking sheet before serving. They will crisp up more as they cool.

The thinner the slices, the crispier the chips will be.
For a more even baking, rotate the baking sheet halfway through.
Store leftover apple chips in an airtight container at room temperature for up to 3 days.
You can experiment with other spices, such as nutmeg or apple pie spice.
