A classic Italian appetizer featuring toasted bread topped with flavorful roasted tomatoes, garlic, and fresh basil. Perfect for a light snack or party appetizer.
Preheat your oven to 400°F (200°C).
In a large bowl, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, salt, and pepper. Toss to coat evenly.
Spread the tomato mixture in a single layer on a baking sheet.
Roast for 25-30 minutes, or until the tomatoes are softened and slightly caramelized.
While the tomatoes are roasting, lightly brush the baguette slices with olive oil.
Toast the baguette slices in the oven for the last 5-7 minutes of the tomato roasting time, or until golden brown and crispy.
Remove the tomatoes and baguette from the oven.
Spoon the roasted tomato mixture onto the toasted baguette slices.
Garnish with fresh chopped basil and drizzle with balsamic glaze (if using).
Serve immediately and enjoy!

For extra flavor, add a pinch of red pepper flakes to the tomato mixture before roasting.
If you don't have fresh basil, you can use dried basil, but fresh basil is highly recommended for the best flavor.
Bruschetta is best served fresh, so assemble it shortly before serving to prevent the bread from becoming soggy.
You can also grill the baguette slices instead of toasting them in the oven for a smoky flavor.
