Crispy and spicy roasted peanuts, a perfect Indian snack.
Preheat oven to 350°F (175°C).
In a large bowl, combine peanuts, besan, rice flour, chili powder, turmeric powder, amchur powder, garam masala, and salt.
Add oil to the peanut mixture and mix well, ensuring all peanuts are coated.
Gradually add water, 1 tablespoon at a time, mixing until the spices adhere well to the peanuts. Do not add too much water, the peanuts should not be swimming in it. You just want a slight coating.
Spread the peanuts in a single layer on a baking sheet lined with parchment paper.
Roast in the preheated oven for 15-20 minutes, or until the peanuts are crispy and golden brown. Stir occasionally to ensure even roasting.
Remove from oven and let cool completely on the baking sheet. The peanuts will crisp up further as they cool.
Store in an airtight container at room temperature.

For a spicier snack, add more chili powder or a pinch of cayenne pepper.
Ensure the peanuts are spread in a single layer on the baking sheet for even roasting.
Don't over-bake the peanuts, as they will become bitter. Keep a close eye on them during the last few minutes of roasting.
You can also air fry these peanuts for about 10-12 minutes at 360F, shaking the basket frequently.
