In a large bowl, toss the Jersey Royal potatoes and Brussels sprouts with 2 tablespoons of olive oil, salt, and pepper.
Spread the vegetables in a single layer on a baking sheet.
Roast for 25-30 minutes, or until the potatoes are tender and the Brussels sprouts are slightly browned and crispy.
While the vegetables are roasting, prepare the lemon-garlic dressing. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, minced garlic, lemon zest, and lemon juice.
Once the vegetables are cooked, transfer them to a serving bowl.
Pour the lemon-garlic dressing over the vegetables and toss to coat.
Garnish with fresh parsley and serve immediately.

If you don't have fresh parsley, you can use dried parsley, but use half the amount.

To prevent sticking, you can line your baking sheet with parchment paper.
