Heat oil in a pan or skillet over medium heat.
Add the frozen corn kernels to the pan and cook for 8-10 minutes, stirring occasionally, until the corn is heated through and slightly browned.
Remove the corn from the heat and transfer it to a large bowl.
Add the chopped onion, tomato, and green chili (if using) to the bowl with the corn.
Stir in the chopped cilantro, lime juice, chaat masala, red chili powder, turmeric powder, and salt. Mix well to combine all the ingredients.
Taste and adjust seasonings as needed. Add more lime juice for tanginess, chili powder for heat, or salt to taste.
Garnish with sev (optional) before serving.
Serve immediately or at room temperature.

For a richer flavor, you can add a tablespoon of butter to the pan while cooking the corn.
If you don't have chaat masala, you can use a combination of cumin powder, coriander powder, amchur (dried mango powder), and black salt.
You can add other vegetables like chopped cucumber, bell pepper, or carrots to customize the chaat to your liking.
This chaat is best enjoyed fresh, but can be stored in the refrigerator for up to a day. The corn might lose some of its crispness.
