
A quick and healthy breakfast that's packed with nutrients and flavor. The garlicky spinach pairs perfectly with a soft-scrambled egg for a satisfying and energizing start to your day.
In a small bowl, whisk together the eggs with a pinch of salt and pepper. Set aside.
Heat the olive oil or vegetable oil in a wok or large skillet over medium-high heat.
Add the minced garlic and red pepper flakes (if using) to the hot oil. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.
Add the spinach to the wok or skillet. Stir-fry until the spinach wilts down significantly, about 2-3 minutes.
Pour the soy sauce or tamari and sesame oil over the spinach and stir to combine.
Push the spinach to one side of the wok or skillet. Pour the whisked eggs into the empty space. Gently scramble the eggs until they are cooked to your desired consistency (soft-scrambled is recommended).
Mix the scrambled eggs with the spinach.
Serve immediately. Sprinkle with shredded Parmesan cheese (if using) and extra black pepper if desired.
