A delicious and warming soup perfect for cold days.
Place lentils, lemon peelings and ginger into mixing bowl then grind
Add carrots, onion and butter then chop
Add stock, salt and pepper then cook
Add coriander and milk then blend until smooth
Nutrition per serving (250g)
For a dairy-free version, use oil instead of butter, and a non-dairy milk of your choice.
Serve in shot glasses for a wonderful amuse-bouche.
To make Carrot and Ginger Soup, omit coriander.
