While the baguette slices are baking, in a small bowl, gently mix the softened goat cheese with the chopped piquillo peppers, salt, pepper and 2 tablespoons of honey.
Once the baguette slices are toasted, let them cool slightly.
Spread the goat cheese and piquillo pepper mixture evenly over the toasted baguette slices.
Drizzle with additional honey to taste. Garnish with fresh thyme leaves, if desired.
