
These baked cauliflower tots are a healthy and delicious gluten-free snack. They're cheesy, flavorful, and easy to make!
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Steam or boil cauliflower florets until tender, about 8-10 minutes. Drain well and let cool slightly.
Once cooled, either chop the cauliflower very finely or pulse in a food processor until it resembles rice-like pieces. Be careful not to over-process.
In a large bowl, combine the cauliflower, shredded cheese, gluten-free panko breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly distributed.
Scoop a tablespoon of the mixture and shape it into a small tot. Place the tot on the prepared baking sheet. Repeat with the remaining mixture.
Drizzle the tots with olive oil.
Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
Let cool slightly before serving. Serve with your favorite dipping sauce (optional).

These tots can be frozen for later. Freeze them in a single layer on a baking sheet, then transfer to a freezer bag. Bake from frozen for about 30 minutes, or until heated through.
