In a large bowl, combine the cooked cauliflower, cheddar cheese, parmesan cheese, egg, almond flour, garlic powder, onion powder, Italian seasoning, salt, and pepper.
Mix well until all ingredients are evenly distributed.
Using a spoon or small cookie scoop, form the mixture into bite-sized portions and place them on the prepared baking sheet.
Drizzle with olive oil.
Bake for 15-20 minutes, or until golden brown and crispy.
