
A crunchy, nutty, and sweet homemade granola recipe easily made in your Thermomix. Perfect for breakfast or as a healthy snack.
Preheat your oven to 160°C (320°F). Line a baking tray with parchment paper.
Place the oats, almonds, cashews, pumpkin seeds, sunflower seeds, and shredded coconut in the Thermomix bowl. Mix for 5 sec/speed 4 to combine.
Add the honey, coconut oil, vanilla extract, ground cinnamon, and salt to the bowl. Mix for 20 sec/Reverse/speed 2, ensuring ingredients are well combined.
Spread the mixture evenly onto the prepared baking tray.
Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy. Be careful not to let it burn.
Remove from the oven and let it cool completely. The granola will become crunchier as it cools.
Once cooled, stir in the dried cranberries.
Store the granola in an airtight container at room temperature for up to 2 weeks.
