Whisk together soy sauce, rice vinegar, honey (if using), and red pepper flakes (if using) in a small bowl. Set aside.
Heat 1/2 tbsp sesame oil in a wok or large skillet over medium-high heat. Add garlic and ginger and stir-fry for about 30 seconds until fragrant.
Add the spinach and stir-fry until wilted, about 2-3 minutes. Remove spinach mixture from the wok and set aside.
Add the remaining 1/2 tbsp sesame oil to the wok. Crack the eggs into the wok and cook to your desired doneness, scrambling them lightly if preferred.
Return the spinach mixture to the wok. Pour the sauce over the spinach and eggs, and stir-fry until everything is well combined and heated through, about 1 minute.
Garnish with sesame seeds and serve immediately.
