A simple and comforting overnight oats recipe infused with warm apple pie spice and topped with crunchy toasted pecans for a healthy and satisfying breakfast.
Combine rolled oats, milk, apple pie spice, maple syrup (or other sweetener), and chia seeds (if using) in a small bowl or jar.
Stir well to combine all ingredients.
Cover the bowl or jar and refrigerate overnight, or for at least 4 hours.
In the morning, toast the chopped pecans in a dry skillet over medium heat for 3-5 minutes, or until fragrant and lightly browned, stirring frequently to prevent burning. Alternatively toast in a 350F oven for 5 minutes.
If desired, add diced apple to the oats in the morning.
Top the overnight oats with the toasted pecans and enjoy cold.

For a creamier texture, use a higher ratio of milk to oats.
If the oats are too thick in the morning, add a splash of milk to thin them out.
Customize your oats with other toppings like berries, nuts, seeds, or a dollop of yogurt.
Toast a larger batch of pecans and store them in an airtight container for future use.
Warm the oats slightly in the microwave for a cozy breakfast on a cold day.
