Place dates, walnuts, cinnamon, and sea salt in a food processor or blender.
Process until the mixture forms a sticky dough. You may need to scrape down the sides of the bowl occasionally.
If the mixture is too dry, add a teaspoon of water at a time until it comes together.
Roll the mixture into small bite-sized balls (about 1 inch in diameter).
If desired, roll the balls in shredded coconut, chopped walnuts, or cocoa powder.
Place the energy bites in an airtight container and store in the refrigerator for at least 30 minutes to firm up. This will also help them last longer.
