
A unique and flavorful snack combining the savory spices of bobotie with the sweetness of apricot, all on freshly popped popcorn.
Pop the popcorn: In a large pot with a lid, heat the oil over medium heat. Add 3-4 popcorn kernels to the pot. When those kernels pop, add the remaining kernels in an even layer. Cover the pot and remove from heat for 30 seconds (this allows the kernels to come to the same temperature for more even popping).
Return the pot to medium heat. Gently shake the pot occasionally to prevent burning. Continue cooking until the popping slows to one pop every 2-3 seconds. Remove from heat and pour the popcorn into a large bowl.
Mix the spices: In a small bowl, combine the turmeric, coriander, cumin, curry powder, thyme, allspice, and salt.
Season the popcorn: While the popcorn is still warm, drizzle the melted butter (if using) over it. Sprinkle the spice mixture evenly over the popcorn and toss gently to coat. Then sprinkle the apricot powder and toss to coat completely.

To make apricot powder: Dehydrate thinly sliced apricots until completely dry. Grind in a spice grinder or food processor until a fine powder forms. Store in an airtight container.
If your popcorn becomes soggy, you can spread it on a baking sheet and bake in a preheated oven at 250°F (120°C) for about 5-10 minutes to crisp it up.
