Tender, flavorful courgette bites braised in white wine with lemon, herbs, and garlic. Perfect as a light appetizer or side dish.
Wash and trim the courgettes. Cut them into 1/2-inch thick rounds.
Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds, until fragrant, being careful not to burn it.
Add the courgette rounds to the skillet and cook for 5-7 minutes, stirring occasionally, until they begin to brown lightly.
Pour in the white wine and vegetable broth. Bring to a simmer.
Cover the skillet with a lid and reduce the heat to low. Braise for 15-20 minutes, or until the courgettes are tender but still hold their shape.
Remove the lid and increase the heat slightly. Cook for a few more minutes to allow the sauce to reduce slightly and thicken.
Stir in the lemon juice, thyme, and parsley. Season with salt and pepper to taste.
Serve the braised courgette bites warm or at room temperature. Garnish with extra fresh herbs, if desired.

For a richer flavor, add a knob of butter to the pan during the last few minutes of cooking.
If you don't have fresh herbs, you can use dried herbs. Use about 1 teaspoon of each dried herb.
These courgette bites can be made ahead of time and reheated before serving.
