Air-pop the popcorn according to your air popper's instructions. Alternatively, pop the popcorn in a large pot with a lid using 1 tablespoon of olive oil over medium heat. Add kernels, cover, and shake occasionally until popping slows to several seconds between pops. Remove from heat.
While popcorn is popping, toast the sesame seeds in a small, dry skillet over medium heat for 2-3 minutes, or until golden brown and fragrant. Watch carefully to prevent burning. Remove from heat and set aside.
In a small bowl, combine the cumin, coriander, ginger, turmeric, cinnamon, cayenne pepper (if using), and salt.
Drizzle the remaining 1 tablespoon of olive oil over the popped popcorn.
Sprinkle the spice mixture evenly over the popcorn. Toss well to coat.
Add the toasted sesame seeds and preserved lemon rind (if using) to the popcorn. Toss again to combine.
Optional: Garnish with fresh parsley before serving.
