A simple and flavorful baked feta dish, perfect as a warm appetizer or light snack. The salty feta pairs beautifully with the sweet tomatoes and briny olives, infused with aromatic herbs.
Preheat your oven to 400°F (200°C).
In a baking dish, combine the halved cherry tomatoes, Kalamata olives, minced garlic, chopped oregano, and chopped thyme.
Drizzle with olive oil and sprinkle with red pepper flakes (if using) and black pepper.
Place the block of feta in the center of the baking dish, nestling it amongst the tomato mixture.
Bake for 15-20 minutes, or until the feta is softened and slightly golden, and the tomatoes have burst and released their juices.
Remove from oven and let cool slightly before serving.
Serve warm with crusty bread for dipping into the melted feta and tomato sauce.

Add a splash of balsamic glaze after baking for extra sweetness and acidity.
For a richer flavor, you can add a sprinkle of grated Parmesan cheese before baking.
Feel free to experiment with other Mediterranean herbs, such as rosemary or basil.
If you don't have Kalamata olives, other types of olives can be used.
