
A simple yet flavorful Mediterranean snack featuring creamy baked feta cheese, sweet roasted cherry tomatoes, and fragrant herbs. Perfect with crusty bread or pita for dipping.
Preheat oven to 400°F (200°C).
In a baking dish, combine the cherry tomatoes, minced garlic, olive oil, oregano, thyme, red pepper flakes (if using), salt, and pepper.
Toss to coat the tomatoes evenly with the oil and seasonings.
Place the feta block in the center of the baking dish, nestled amongst the tomatoes. Drizzle a little extra olive oil over the feta.
Bake for 20-25 minutes, or until the tomatoes are softened and starting to burst, and the feta is softened and slightly golden around the edges.
Remove from oven and let cool slightly before serving.
Serve warm with crusty bread or pita bread for dipping.
