Prepare the Jersey Royal potatoes by boiling them until tender. Let them cool slightly before thinly slicing.
Lightly butter one side of each brioche slice with Jersey butter.
Heat a grill pan or BBQ to medium heat.
Place the buttered side of the brioche slices down on the grill pan. Grill for 2-3 minutes per side, or until golden brown and slightly toasted.
While the brioche is grilling, gently warm the lavender honey in a small saucepan over low heat, being careful not to boil it. This will make it easier to drizzle.
Once the brioche toast is ready, spread each slice with a tablespoon of fig jam.
Arrange a few slices of the boiled Jersey Royal potatoes on top of the fig jam.
Drizzle each toast with the warmed Jersey lavender honey.
Garnish with fresh thyme leaves and/or a sprig of Rosemary, if desired, and serve immediately.

For a richer flavour, you can lightly toast the brioche slices in the oven before grilling.
If you don't have a grill pan, you can use a regular frying pan or toast the brioche in a toaster.
Adjust the amount of honey and fig jam to your preference.
Serve with a glass of chilled white wine or a sparkling cider from Jersey.
