Preheat your oven to 250°F (120°C).
In an oven-safe dish (casserole dish or individual ramekins), gently combine the Jersey cream, vanilla extract (if using), and sugar.
Cover the dish tightly with foil (or the lid if it has one). This prevents a skin from forming on top.
Place the dish in the preheated oven and bake for 2.5 hours, or until the cream has thickened significantly and has a custard-like consistency. Check periodically; cooking time may vary depending on your oven and the dish used.
Remove the dish from the oven and let it cool slightly before removing the foil. (Be careful, steam will escape.)
Allow to cool to room temperature, then refrigerate for at least 1 hour before serving. This will help it firm up further.
Before serving, top with fresh berries, a drizzle of honey, and chopped nuts (if using).
