Preheat your grill to medium heat. Lightly grease the grates with cooking oil spray or brush with oil to prevent sticking.
Brush both sides of the Jersey cream cakes with melted butter.
Place the buttered cakes on the preheated grill. Grill for 2-3 minutes per side, or until golden brown and slightly warmed through, leaving grill marks.
While the cakes are grilling, prepare the honey-lavender glaze. In a small saucepan, combine honey, heavy cream, and crushed lavender buds.
Heat the glaze over low heat, stirring constantly, until the honey is thinned and the lavender is fragrant (about 2-3 minutes). Do not boil.
Remove the glaze from heat and stir in vanilla extract (if using) and a pinch of sea salt.
Remove the grilled cakes from the grill and place them on serving plates.
Drizzle the honey-lavender glaze generously over the grilled Jersey cream cakes.
