In a large bowl, whisk together the flour, baking powder, sugar, and salt.
In a separate bowl, whisk together the eggs, Jersey milk, ricotta cheese, melted Jersey butter, lemon zest, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix, a few lumps are okay.
Heat a lightly greased griddle or large frying pan over medium heat. Grease with Jersey butter.
Pour 1/4 cup of batter onto the hot griddle for each pancake.
Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles begin to form on the surface.
Serve immediately, drizzled with Jersey honey and topped with fresh Jersey strawberries (if using).
