Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
Add ground turkey to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Stir in chili powder, cumin, salt, and pepper. Add black beans and cook for another 2 minutes.
In a large bowl, whisk together eggs, cottage cheese, and salsa.
Warm the tortillas slightly in the microwave (about 10-15 seconds each) to make them more pliable.
Place a tortilla in the baking dish. Spoon some of the turkey mixture into the center of the tortilla. Fold in the sides of the tortilla, then roll it up tightly to form a burrito. Place the burrito seam-side down in the baking dish. Repeat with the remaining tortillas and filling.
Pour the egg mixture evenly over the burritos in the baking dish.
Sprinkle shredded cheddar cheese over the top.
Bake for 25-30 minutes, or until the egg is set and the cheese is melted and bubbly.
Let cool slightly before serving. Garnish with extra salsa, avocado, or sour cream if desired.
