A delicious and easy low-carb breakfast option that's packed with flavor and protein. Perfect for meal prepping!
Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.
Heat olive oil in a skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
Add spinach to the skillet and cook until wilted, about 2-3 minutes. Squeeze out any excess moisture from the spinach.
In a large bowl, whisk together eggs, heavy cream, salt, pepper, and nutmeg (if using).
Stir in the cooked spinach mixture and crumbled feta cheese.
Pour the egg mixture into the prepared pie dish.
Bake for 30-35 minutes, or until the quiche is set and the top is lightly golden brown. A knife inserted into the center should come out clean.
Let cool slightly before slicing and serving.

For a richer flavor, add a tablespoon of cream cheese to the egg mixture.
You can customize this quiche with other low-carb vegetables such as mushrooms, bell peppers, or zucchini.
Store leftover quiche in the refrigerator for up to 3 days.
To reheat, bake in a preheated oven at 350F for 10-15 minutes or microwave until warmed through.
Squeezing the spinach thoroughly prevents a soggy quiche.
