These grilled Brussels sprouts skewers are a delicious and healthy snack. The balsamic glaze adds a touch of sweetness and acidity that perfectly complements the slightly bitter sprouts.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Preheat your grill to medium heat (about 350-400°F or 175-200°C).
Thread the halved/quartered Brussels sprouts onto the skewers, leaving a small space between each sprout.
In a small bowl, whisk together the olive oil, salt, and pepper.
Brush the Brussels sprouts skewers with the olive oil mixture.
Place the skewers on the preheated grill. Grill for about 15-20 minutes, turning occasionally, until the Brussels sprouts are tender and slightly charred.
While the Brussels sprouts are grilling, prepare the balsamic glaze. In the same small bowl, whisk together the balsamic vinegar, honey (or maple syrup), and Dijon mustard.
Once the Brussels sprouts are grilled, remove them from the grill and brush them generously with the balsamic glaze.
Serve immediately as a snack or appetizer.

For extra flavor, add a sprinkle of red pepper flakes to the olive oil mixture.
To prevent the balsamic glaze from burning on the grill, apply it after the Brussels sprouts are mostly cooked.
If you don't have a grill, you can roast the Brussels sprouts in the oven at 400°F (200°C) for about 20-25 minutes, or until tender and slightly browned.
Adjust the amount of honey (or maple syrup) in the balsamic glaze to your preferred sweetness level.
