In a large bowl, toss the chicken wings with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.
Arrange the wings in a single layer on the prepared baking sheet. Bake for 30-40 minutes, flipping halfway through, until cooked through and crispy.
While the wings are baking, prepare the bourbon glaze. In a medium saucepan, combine bourbon, brown sugar, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, and red pepper flakes (if using).
Bring the glaze to a simmer over medium heat, stirring occasionally, until the brown sugar is dissolved.
Reduce the heat to low and simmer for 5-7 minutes, or until the glaze has slightly thickened.
Stir in the cornstarch slurry and continue to simmer for another 1-2 minutes, or until the glaze is thickened to your desired consistency.
Remove the glaze from the heat and let it cool slightly.
Once the wings are cooked, transfer them to a large bowl.
Pour the bourbon glaze over the wings and toss to coat evenly.
Serve immediately and enjoy!
