A flavorful and protein-packed appetizer featuring edamame, shrimp, and a spicy kick, served on toasted baguette slices.
Preheat oven to 350°F (175°C). Arrange baguette slices on a baking sheet and toast in the oven for 5-7 minutes, or until lightly golden. Set aside to cool slightly.
While baguette is toasting, chop the cooked shrimp into bite-sized pieces.
In a skillet, lightly sauté the edamame in sesame oil for 2-3 minutes, until heated through.
In a small bowl, combine the chopped shrimp, edamame, mayonnaise, Sriracha sauce, and lime juice. Mix well. Season with salt and pepper to taste.
Spoon a generous amount of the shrimp and edamame mixture onto each toasted baguette slice.
Garnish with sliced green onions.
Serve immediately and enjoy!
