If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
Thread the marinated chicken onto the skewers, alternating with red onion and bell pepper.
Preheat your grill to medium-high heat. Lightly oil the grill grates.
Grill the chicken skewers for 8-12 minutes, turning occasionally, until the chicken is cooked through and has a slight char. Internal temperature should reach 165°F (74°C).
While the chicken is grilling, warm the pita bread in a dry skillet or microwave.
