Fluffy homemade doughnuts topped with a sweet maple glaze and crispy bacon pieces. A perfect sweet and savory Canadian treat for breakfast!
In a large mixing bowl, combine flour, sugar, yeast, and salt.
In a separate bowl, whisk together warm milk, melted butter, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic.
Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
While the dough is rising, cook the bacon until crispy. Crumble and set aside.
Once the dough has doubled, punch it down and turn it out onto a lightly floured surface. Roll out to about 1/2 inch thickness.
Use a doughnut cutter to cut out doughnuts. Place the doughnuts on a baking sheet lined with parchment paper. Cover with plastic wrap and let rise for another 30 minutes.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Carefully drop the doughnuts into the hot oil, a few at a time. Fry for 1-2 minutes per side, or until golden brown. Remove from oil and place on a wire rack to cool slightly.
Prepare the maple glaze: In a small saucepan, heat the maple syrup over low heat until warm. Remove from heat.
In a bowl, whisk together powdered sugar and warm maple syrup. Add milk, 1 tablespoon at a time, until you reach your desired consistency.
Dip the warm doughnuts into the maple glaze, coating evenly. Place back on the wire rack.
Sprinkle the glazed doughnuts with crumbled bacon pieces.
Let the glaze set for a few minutes before serving. Enjoy!

Make sure the milk is warm, but not too hot, to avoid killing the yeast.
Don't overcrowd the fryer, as this will lower the oil temperature and result in greasy doughnuts.
For a richer flavor, use brown butter in the doughnut dough.
You can use store-bought doughnuts if you are short on time.
For an extra smoky flavour, use smoked bacon.
