Soak gelatin leaves in cold water for 5 minutes until softened.
Heat Jersey cream, milk, sugar, and vanilla pod with seeds in a saucepan over medium heat, stirring until sugar dissolves. Do not boil.
Remove from heat. Squeeze excess water from gelatin and stir into the warm cream mixture until completely dissolved.
Strain through a fine sieve into a jug, then pour into 6 ramekins. Refrigerate for at least 4 hours until set.
Toss sliced strawberries with icing sugar 30 minutes before serving. Top each panna cotta with strawberries and serve.
