If toasting walnuts: Heat a small skillet over medium heat. Add chopped walnuts and toast for 3-5 minutes, stirring frequently, until fragrant and lightly golden. Remove from heat and let cool slightly. If desired, sprinkle with cinnamon while cooling.
In each parfait glass or bowl, layer Greek yogurt, honey, toasted walnuts (if toasting), and pomegranate seeds. Repeat layers until glass is full.
Drizzle the top layer with honey and sprinkle with remaining walnuts and pomegranate seeds.
Serve immediately or chill for later.
