Preheat oven to 375°F (190°C).
Wash and core the apples. Cut each apple in half or quarters.
Place the apples in a baking dish and drizzle with lemon juice and vanilla extract.
In a separate bowl, combine the rolled oats, chopped almonds, cinnamon, maple syrup, and melted coconut oil. Mix well to form a crumble.
Sprinkle the crumble mixture evenly over the apples.
Pour the water in the bottom of the baking dish.
Bake for 30-35 minutes, or until the apples are tender and the crumble is golden brown.
Let cool slightly before serving. Serve warm.
