Preheat oven to 375°F (190°C).
Wash and core the apples, leaving the bottom intact.
In a mixing bowl, combine the chopped walnuts, oats, raisins (if using), cinnamon, and nutmeg.
Add the melted coconut oil and maple syrup (or honey) to the bowl and mix well.
Stuff each apple with the walnut-oat mixture.
Place the stuffed apples in a baking dish and pour 1/2 cup of water into the bottom of the dish.
Bake for 30-40 minutes, or until the apples are tender and the filling is golden brown.
Let cool slightly before serving. Drizzle with extra maple syrup if desired.
