In a large non-stick wok or frying pan, melt the butter over medium heat.
Add the granulated sugar and brown sugar to the melted butter. Stir constantly until the sugar dissolves completely and begins to caramelize, turning a light golden brown color. Be careful not to burn the sugar.
Slowly pour the Jersey cream into the caramelized sugar mixture, stirring constantly to prevent lumps from forming. The mixture will seize up initially, but keep stirring.
Continue to stir and cook the cream mixture over medium heat for about 15-20 minutes, or until it thickens slightly and takes on a light caramel color. Adjust heat if needed to avoid burning the sugar.
Stir in the vanilla extract and a pinch of sea salt.
Remove from heat and allow to cool slightly for a few minutes. The mixture will thicken further as it cools.
Spoon the caramelized Jersey cream into serving bowls. Top with fresh mixed berries and a drizzle of berry compote (if using).
Serve immediately or chilled. Chilling will result in a denser, pudding-like texture.
