
A classic British dessert with a twist. Crushed meringue, whipped cream, fresh strawberries, and a hint of elderflower create a light and refreshing finish to any meal, especially well-suited after a hearty tomato soup.
Preheat oven to 120°C (100°C fan/Gas Mark ½). Line a baking tray with baking parchment.
In a clean, dry bowl, whisk the egg whites until stiff peaks form. Gradually add the caster sugar, whisking continuously until the meringue is glossy and smooth.
Spoon or pipe the meringue onto the prepared baking tray in various shapes and sizes. Aim for a mix of larger and smaller pieces for texture.
Bake for 30 minutes, then turn off the oven and leave the meringues to cool completely inside the oven. This will help them dry out properly.
While the meringues are cooling, whip the double cream with the icing sugar until soft peaks form. Be careful not to overwhip.
Gently fold the elderflower cordial into the whipped cream.
In a large bowl or individual glasses, roughly crush the meringues. Add the strawberries and the elderflower cream. Gently mix everything together, being careful not to overmix.
Serve immediately for the best texture.

For a more intense elderflower flavor, macerate some of the strawberries with a tablespoon of elderflower cordial for 30 minutes before assembling the Eton Mess.
If you don't have elderflower cordial, you can substitute it with a splash of lemon juice or another fruity liqueur, such as crème de cassis.
Eton Mess is best served immediately as the meringue will start to soften in the cream. You can prepare the meringue and the cream separately ahead of time and assemble just before serving.
Feel free to experiment with other berries, such as raspberries, blueberries, or blackberries.
