
A hearty and healthy baked oatmeal perfect for meal prepping or a weekend brunch. Packed with fiber, protein, and antioxidants from berries and nuts, this bake is a nutritious and delicious way to start your day.
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a large bowl, combine the rolled oats, milk, eggs, maple syrup, baking powder, vanilla extract, salt, and cinnamon (if using). Stir until well combined.
Gently fold in the mixed berries and half of the chopped nuts.
Pour the mixture into the prepared baking dish and sprinkle the remaining chopped nuts on top.
Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set. A knife inserted into the center should come out mostly clean.
Let cool slightly before slicing and serving.
