If making maple mustard from scratch: In a small bowl, whisk together the Dijon mustard and maple syrup. Set aside.
Spread maple mustard (or store-bought version) evenly on one side of each slice of bread.
On two slices of bread (mustard side up), layer half of the cheddar cheese, the apple slices, and the remaining cheddar cheese.
Top with the other two slices of bread, mustard side down.
Spread butter on the outside of each sandwich.
Heat a large skillet or griddle over medium heat.
Place the sandwiches in the skillet and cook for 3-5 minutes per side, or until golden brown and the cheese is melted and gooey.
Remove from skillet, let cool slightly, slice in half and serve immediately.
