
A refreshing and unusual lassi blending the savory spices of Bobotie with the sweetness of mango. A great palate cleanser or snack.
Preheat oven to 180°C (350°F).
Soak the bread in milk until softened. Squeeze out excess milk and crumble into a bowl.
In a pan, brown the ground beef over medium heat. Drain any excess fat.
Add the chopped onion and minced garlic to the pan with the beef. Cook until softened, about 5 minutes.
Stir in the curry powder, turmeric, dried apricots, chutney, salt and pepper. Cook for another 2 minutes to release the flavors.
Remove from heat and let it cool slightly.
In a bowl, combine the cooled beef mixture with the crumbled bread and beaten egg. Mix well to combine.
Pour the mixture into an oven-safe dish. Sprinkle the slivered almonds over the top.
Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the mixture is set.
Let the bobotie cool completely.
In a blender, combine the cooked bobotie (about 1/2 cup per serving - adjust to taste preference for less/more bobotie flavour), mango, yogurt, milk, lemon juice, and sugar (if using).
Blend until smooth and creamy. Add more milk if needed to adjust the consistency.
Taste and adjust sweetness as needed.
Pour into glasses and serve chilled.

For a richer flavor, use full-fat yogurt and milk.
Adjust the amount of Bobotie added to the lassi based on your taste preference for the savory component.
For a vegan option, substitute the ground beef with a plant-based ground alternative, the milk and yogurt with plant-based alternatives, and egg with a flax egg.
Garnish with extra slivered almonds or a sprinkle of curry powder before serving.
