
A hearty and healthy baked oatmeal, packed with berries, nuts, and seeds, perfect for a make-ahead breakfast.
Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
In a large bowl, combine rolled oats, milk, eggs, maple syrup, vanilla extract, baking powder, salt, and cinnamon (if using).
Stir in half of the berries and nuts.
Pour the mixture into the prepared baking dish.
Top with the remaining berries and nuts, and chia seeds (if using).
Bake for 35-40 minutes, or until golden brown and set in the center. A knife inserted into the center should come out clean.
Let cool slightly before serving.

For a richer flavor, use whole milk or add a tablespoon of melted butter or coconut oil to the batter.
Baked oatmeal can be stored in the refrigerator for up to 5 days. Reheat individual portions in the microwave or oven.
Feel free to customize the recipe with your favorite fruits, nuts, and spices. Raisins, chopped apples, or pumpkin pie spice are all great additions.
To make this recipe vegan, substitute the eggs with flax eggs (2 tablespoons ground flaxseed mixed with 6 tablespoons water, let sit for 5 minutes) and use non-dairy milk.
