Crispy baguette croutons toasted with the savory and umami flavors of a banh mi, served with a creamy, spicy aioli for dipping. A delightful side dish or snack!
Preheat oven to 350°F (175°C).
Cut the baguette into roughly 1/2-inch cubes.
In a large bowl, whisk together soy sauce, rice vinegar, sesame oil, garlic powder, ginger powder, and sugar.
Add the baguette cubes to the bowl and toss to coat evenly. Drizzle with vegetable oil and toss again.
Spread the baguette cubes in a single layer on a baking sheet.
Bake for 15-20 minutes, or until golden brown and crispy, flipping halfway through. Watch carefully to prevent burning.
While the croutons are baking, prepare the spicy aioli. In a small bowl, combine mayonnaise, sriracha, lime juice, and minced garlic. Stir until well combined. Taste and adjust the amount of sriracha to your preference.
Remove the croutons from the oven and let them cool slightly before serving.
Serve the warm Bahn Mi croutons with the spicy aioli dipping sauce.
