In a separate bowl, combine the flour, oats, and 1/4 cup brown sugar.
Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Sprinkle the crumble topping evenly over the apples.
Bake for 30-35 minutes, or until the topping is golden brown and the apples are tender and bubbling.
While the crumble is baking, prepare the custard. In a medium saucepan, whisk together milk, egg yolks, sugar, and salt.
Cook over medium-low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon (about 8-10 minutes). Be careful not to boil.
Remove from heat and stir in the vanilla extract.
Let cool slightly. Serve the warm apple crumble with warm vanilla custard.
