
Crispy baked sweet potato fries glazed with a sweet and spicy aji amarillo sauce, served with a refreshing cilantro lime dip. A flavorful and addictive snack!
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss sweet potato fries with olive oil, cornstarch, salt, and pepper. Ensure the fries are evenly coated.
Arrange fries in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
While the fries are baking, prepare the aji amarillo glaze. In a small saucepan, combine aji amarillo paste, honey, lime juice, soy sauce, and rice vinegar. Heat over medium heat, stirring constantly, until slightly thickened, about 3-5 minutes. Remove from heat.
Prepare the cilantro lime dip. In a small bowl, combine mayonnaise, cilantro, lime juice, and minced garlic. Mix well and set aside.
Once the fries are cooked, remove them from the oven and immediately toss them with the aji amarillo glaze until evenly coated.
Serve the aji amarillo glazed sweet potato fries hot with the cilantro lime dip on the side.

For extra crispy fries, soak the sweet potato fries in cold water for 30 minutes before tossing with oil and spices. Pat them dry thoroughly before baking.
Don't overcrowd the baking sheet. If necessary, bake the fries in batches to ensure even cooking.
Adjust the amount of aji amarillo paste to your spice preference. Start with less and add more to taste.
The cilantro lime dip can be made ahead of time and stored in the refrigerator.
