A light and creamy dip made with whipped ricotta, drizzled with honey, sprinkled with pistachios, and zested with fresh orange. Served with toasted baguette slices.
Preheat your oven to 375°F (190°C).
Arrange the baguette slices on a baking sheet. Brush lightly with olive oil and sprinkle with a pinch of salt. Toast in the preheated oven for 8-10 minutes, or until golden brown and crispy. Set aside to cool slightly.
While the baguette slices are toasting, prepare the ricotta. Drain any excess liquid from the ricotta.
Place the ricotta in a food processor or large bowl. If using a food processor, process until smooth and airy, about 2-3 minutes. If using an electric mixer, beat on medium-high speed until smooth and airy, about 3-5 minutes.
Season the whipped ricotta with a pinch of salt and black pepper to taste. Mix well.
Spread the whipped ricotta onto a serving platter or bowl.
Drizzle generously with honey.
Sprinkle with chopped pistachios.
Zest the orange over the ricotta.
Serve immediately with the toasted baguette slices.

You can prepare the whipped ricotta ahead of time and store it in the refrigerator for up to 24 hours. Let it come to room temperature slightly before serving.
Toast the baguette slices until they are golden brown and crispy, but be careful not to burn them.
Experiment with different toppings! Try using chopped almonds, walnuts, or pine nuts instead of pistachios. Or, use different types of honey, such as lavender or wildflower honey.
If you don't have an orange, you can use lemon zest instead.
