Brush baguette slices with olive oil and arrange them in a single layer on a baking sheet.
Bake for 5-7 minutes, or until lightly golden and crisp.
While the baguette is baking, combine feta cheese and heavy cream in a food processor or using a hand mixer. Process or beat until smooth and creamy. Add 2 tablespoons of honey and mix until combined.
Spread a generous spoonful of whipped feta onto each toasted baguette slice.
Drizzle with additional honey and sprinkle with chopped pistachios.
Garnish with fresh thyme leaves (if using).
Serve immediately or at room temperature.

For a spicier kick, add a pinch of red pepper flakes to the whipped feta.
You can substitute walnuts or almonds for pistachios.
If you don't have heavy cream, you can use a little milk or Greek yogurt, but the texture might be slightly different.
