In a medium saucepan, combine the rice, rice milk, coconut milk, diced apples, cinnamon, star anise (if using), and salt.
Bring the mixture to a simmer over medium heat, then reduce the heat to low, cover, and cook for 25-30 minutes, or until the rice is tender and the pudding has thickened, stirring occasionally to prevent sticking.
Remove from the heat and discard the star anise. Stir in the vanilla extract, maple syrup, fish sauce, and lime juice. Taste and adjust sweetness or seasoning as needed.
Serve warm in bowls, garnished with toasted coconut flakes and chopped peanuts (optional). Alternatively, chill in the refrigerator for at least 2 hours before serving.
