Prepare the spicy honey glaze: In a small saucepan, combine honey, sriracha, soy sauce, and rice vinegar. Heat over low heat, stirring constantly, until well combined and slightly thickened (about 5 minutes). Remove from heat and set aside.
Heat vegetable oil and sesame oil in a wok or large skillet over medium-high heat.
Add the Jersey cream curds to the hot wok and stir-fry for 5-7 minutes, or until lightly browned and slightly softened. Be careful not to overcook, as they can become rubbery.
Pour the spicy honey glaze over the stir-fried cream curds and toss gently to coat evenly. Continue to cook for 1-2 minutes, allowing the glaze to caramelize slightly.
Remove from heat and transfer the stir-fried cream curds to a serving platter.
Garnish with toasted walnuts and sliced green onions.
