Enjoy a delicious and satisfying Turkish breakfast with these homemade Simit (sesame-covered bagels) served with sweet honey and rich Kaymak (clotted cream).
In a large bowl, combine flour, yeast, salt, and sugar. Gradually add warm water and mix until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic. Add vegetable oil in the end and knead for one more minute.
Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Preheat oven to 450°F (232°C). Line baking sheets with parchment paper.
Punch down the dough and divide it into 4 equal pieces. Roll each piece into a long rope, about 24 inches long. Twist the rope around itself to form a braid, then join the ends together to form a circle. Pinch the seam to seal.
In a shallow bowl, whisk together the molasses and 1/2 cup of water.
Dip each simit into the molasses mixture, then immediately dredge generously in the toasted sesame seeds, pressing the seeds into the dough.
Place the simits on the prepared baking sheets.
Bake for 18-20 minutes, or until golden brown.
Let the simits cool slightly on a wire rack before serving.
Serve warm simits with honey and kaymak.

If you don't have Kaymak, you can substitute it with mascarpone cheese or thick Greek yogurt.
