In a separate small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon zest, lemon juice, oregano, thyme, and garlic powder.
Place the chicken breasts on the prepared baking sheet alongside the vegetables. Drizzle the lemon herb mixture evenly over the chicken.
Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (74°C).
Let the chicken rest for a few minutes before serving. Serve immediately.
